Chicken Skewers with Tzatziki


This bank holiday Monday is one of those rare lucky ones where the sun is shining and there are no clouds in the sky. Now this only means one thing... Barbecue! If you're hosting or heading to an alfresco dinner party, you wont fail to impress by providing these delicious chicken skewers. The ingredients are all really simple, most will be found in your cupboard and the rest can be grabbed from the local supermarket. It's also very easy to prepare, get everything ready and in the fridge in advance and it can be marinating in the fridge while you choose the perfect summer outfit! 

Ingredients:
For the Tzatziki
  • 1 large cucumber, peeled, seeded and diced
  • 2 tablespoons olive oil
  • 1/2 lemon, juiced
  • 1 teaspoon salt + ground pepper, to taste
  • 2 tablespoons fresh dill
  • 2 garlic cloves, minced
  • 250 ml greek yoghurt

For the Chicken
  • 4 boneless chicken breast
  • 1/2 teaspoon salt
  • 1/2 teaspoon cumin
  • 1/2 teaspoon dried oregano
  • 1/2 teaspoon dill
  • 1/2 lemon, zested and juiced
  • ground pepper
note: soaked skewers are needed for this dish
Tzatziki
Absorb as much of the liquid from the cucumber as possible with a paper towel.
In a bowl, mix together olive oil, lemon juice, salt, dill, and garlic. Add cucumber and yogurt, mix to combine.
Place the tzatziki in the fridge and let the flavors marinate for at least an hour.

Chicken
Cut chicken into bite size pieces. In a bag or container, add chicken pieces, salt, cumin, oregano, dill and lemon juice & zest. Place in the refrigerator and marinate for anywhere between 1-3 hours.
Spear the chicken with the skewers and barbecue until cooked all the way through.
Serve on a pretty platter with the dip and enjoy!
